'How to prepare Dum Aloo | Bengali Niramish Aloo Dum Recipe | Baby Potato Curry  Dum Aloo is very popular veg recipe of Indian cuisine. It is extremely delicious and easy to prepare, actually boiled potato cooked into the Indian spicy gravy.   INGREDIENTS: baby potato -  300g boiled, Ginger paste -  1 tbsp, Cumin powder -  1 tsp, Coriander powder -  1 tsp, Kashmiri red chilli powder -  2 tsp, Garam masala powder -  1 tsp, Turmeric powder -  1/2 tsp, Asafoetida -  1/2 tsp, Fresh tomato puree -  1/2 cup, Cashew poppy seeds paste -  2 tbsp, Salt to taste, Sugar -  1/2 tsp, Bay leaf -  1, Green cardamom -  2-3, Cloves -  3-4, Cinnamon -  small. Cumin seeds -  1/2 tsp, Kashmiri whole dry red chilli -  2, Cilantro -  hand full chopped, Clarified Butter -  1 tbsp, Oil -  1/3 cup,  METHOD: Put some holes of the potatoes with a fork, marinate the it with turmeric powder and salt then keep it aside for 30 mins.  heat the pan and fry the boiled potatoes for 2-3 mins. Take it out into a another plate.  In the same pan add little more oil and put cumin seeds, green cardamoms, cloves, cinnamon, red chillies and bay leaf, fry them for  a while.  Add ginger paste and stir it for a while, add all the dry spices powder along with salt and sugar, after a good mixing add asafoetida, mix well.  Add fresh tomato puree then cook it for 1-2 mins.  Put potato pieces into the masala mixture, mix well.  Add cashew poppy seeds paste and give it a good mix.  Put little of water, cook them for 2 mins over high heat.  Add clarified butter and mix well for 2 mins.  Add 2 cups of water, mix well and cook them for 5 mins with cover, over medium heat.  Dum Aloo is ready to serve.'
