'How to Smoke Food at Home, The Middle Eastern Way'

'I cooked Saudi style Chicken Mandy. Traditionally Chicken Mandy is cooked and smoked inside a tandoor, an underground clay oven filled with hot charcoal wood. To smoke food at home in Saudi, they place a small bowl of burning charcoal into the pot of food or oven.  Pour oil or melted butter into a ramekin/heatproof bowl lined with foil. Place the bowl in the middle of the rice. Light up a small piece of charcoal on the stove for 2 minutes and quickly place the charcoal into the bowl. Cover the lid on the pan immediately to smoke for 15 minutes.'
