'오후의 빵집 님 곡물베이글 레시피를 참고했습니다. I referred to Afternoon Bread\'s grain bagel recipe. 강력분 bread flour 345g 호밀가루 rye flour 43g 통밀가루 whole wheat flour 43g 생이스트 fresh yeast 10g 물 water 250g 식용유 oil 13g 소금 salt 7g 설탕 sugar 17g 1. 모든 재료 섞어서 약 3분 반죽 (반죽기 5분: 2분 섞고 3분 치대기) Mix all the ingredients and knead for about 3 minutes. 2. 1차 발효 30분 Let the dough ferment for 30 minutes at room temperature. 3. 120g씩 6등분 후 둥글리기, 10분 휴지 Divide the dough into 6 pieces each weighing 120g , roll them into balls and let them sit for 10 minutes at room temperature. 4. 성형 후 2차발효 30분 Shape the dough and let it ferment for 30 minutes at room temperature. 5. 끓는 물에 앞,뒷면 10초간 데치기 Cook each piece briefly in boiling water for 10 seconds each side. 6. 200도 오븐에 20분 (원하는 색이 나올 때 까지) Bake for 20 minutes (until golden brown) at 200 degrees Celcius.'See also:
